BLACK BEAN AND VEGETABLE SOUP
1 tablespoon olive oil
1 medium onion chopped
2 cloves of garlic minced
2 teaspoons chili powder
1 teaspoon ground cumin
1 bag of frozen mixed vegetables
2 cups of vegetable broth
3 cans of black beans (rinsed and drained)
1/4 teaspoon black pepper
1 (14.5 ounce) can stewed tomatoes
1.) (In a saucepan) Heat olive oil cook onions and garlic, stir occasionally about 5 minutes until onions is softened
Add in chili powder and cumin cook for about 1 minute. Then add vegetable stock, 1 and 1/2 cans of beans, frozen vegetables and pepper and bring to boil.
2.) In a food processor or blender puree together tomatoes and remaining beans. Add to pot reduce heat, cover and simmer for 10 to 15 minutes
